Gegrillte Mango mit Sauerrahm-Orangen-Eis

Zutaten:

1 reife Mango
¼ Sternanis
¼ TL Zimt
1 TL Puderzucker
500g Saure Sahne
100g Puderzucker
2-3 EL Zitronensaft
2 Bio-Orange
1 EL Akazienhonig
½ Vanilleschote
Zubereitung:
 Als erstes bereiten wir die Eismasse vor. Dazu die saure Sahne mit dem Puderzucker vermischen. Den Zitronensaft auspressen und unter die Mischung rühren. Die Schale einer Orange abreiben, danach die Orangen auspressen.

Die Hälfte des Orangensaftes mit dem Honig in einem Topf langsam erhitzen. Das Mark der Vanille auskratzen und zugeben, auch die Vanilleschote mitkochen und die Orangenschalen zugeben. Etwas ziehen und dann ein wenig abkühlen lassen. Mit der sauren Sahne vermischen und glattrühren.

 Die Eismasse in der Eismaschine gefrieren lassen, bis die Konsistenz cremig ist (Etwa 45 Minuten).

Kurz bevor das Eis fertig gerührt ist, die Mango schälen und in Scheiben schneiden. Den übrig gebliebenen Orangensaft mit Zimt und geriebener Sternanis sowie Puderzucker vermischen. Die Mango in einer Pfanne anbraten und mit dem Orangensaft-Gemisch ablöschen. Den Saft einkochen lassen.
Alles anrichten und servieren.

Mango Chocolate Mousse Cake

Mango - Chocolate Mousse Cake
- makes one 26 cm (10-inch) round cake, 12-16 pieces -

Almond Chocolate Sponge
5 eggs
125 g sugar
1 pinch of salt
60 g dark chocolate
100 g ground almonds

Preheat the oven to 160° C (325° F). Line a 24 cm (9-inch) springform pan with parchment paper.

Melt the chocolate over a water bath. Let cool a little. Separate the eggs. Whisk the egg yolks with 25 g of the sugar until the mixture turns frothy and pale yellow. Add the melted chocolate to the egg yolk mixture and stir to combine. Also add the almonds.

Beat the egg whites until soft peaks form, then add the remaining 100 g sugar and beat until glossy and stiff. Fold into the chocolate mixture. Bake for about 40 minutes. Let cool on a wire rack.


Chocolate Mousse
65 g milk chocolate
65 g dark chocolate (70%)
3 egg yolks
7 g instant gelatin powder
50 ml heavy cream
50 ml orange liqueur (e.g. Grand Marnier)
400 ml heavy cream

Melt the two kinds of chocolate over a water bath. Whisk the egg yolks until creamy.

In a small saucepan warm up the 50 ml heavy cream with the orange liqueur until almost boiling. Stir in the instant gelatin (if you use regular gelatin you have to soak it first). Then add the melted chocolate. Using an immersion blender mix everything together until smooth. Then add the egg yolks (the chocolate mixture should still be warm).

Let the mixture cool a little. Whip the heavy cream until stiff peaks form and add to the chocolate mousse, when it is just starting to set.


Start Assembly
Cut the cooled chocolate sponge lengthwise into two layers. Put one layer on your cake plate. Put a cake ring around it. If using the decorative joconde put it around the chocolate sponge.

Fill the chocolate mousse on top of the cake, then add the second cake layer. Put in the fridge to cool for at least one hour.


Mango Mousse
6 sheets gelatin
1 egg
1 egg yolk
80 g sugar
150 g mango puree
220 ml heavy cream

To make the mango mousse start with soaking the gelatin sheets in cold water.

In a bowl over a water bath whisk together the egg, egg yolk and sugar. Keep whisking until the mixture reaches about 70° C (158° F) and it starts to thicken. Take off the water bath and pour the mixture through a sieve. Add the gelatin sheets and stir until they have dissolved.

Add the mango puree and whisk until combined and the mixture starts to cool down. Whip the heavy cream until soft peaks form and carefully fold into the mango mixture.

Pour the mousse on top of your cake, and put in the fridge to cool for at least 3 hours.


Mango Mirror Glaze
1 sheet gelatin
20 g sugar
20 ml water
40 g mango puree

For the mirror glaze soak the gelatin sheet in cold water. Heat the water and sugar in a small pot until boiling and the sugar has dissolved. Add the mango puree and take the pot off the heat. Now add the soaked gelatin sheet and stir until it has dissolved. Let cool until lukewarm. Carefully pour over the cake and let set in the fridge for about 2 hours.

Remove the cake ring before serving and decorate with some fresh cut mango slices.

Eggless No Bake Mango Cheesecake - Mango Käsekuchen

Ingredients 


For the base: 

Digestive biscuits - 250 gms, finely crumbled
Butter - 100 gms, melted (I used unsalted butter) 

For the filling:

 Philadelphia full fat cream cheese - 340 gms/ 12 oz (refer notes for substitute)
Whipping cream - 250 ml (1 cup approx)
Mango pulp - 1½ cup 
Mango - 1-2, cut into small bite size pieces (optional)
Gelatine - 1 tbsp/10 gms
Hot water - ½ cupicing 
sugar - 2-3 tbsp
Sugar - ⅓-1/2 cup (refer notes)

For glaze topping :

Mango pulp - 1 cupGelatine - 1 tbsp/10 gmsHot water - ½ cup

Instructions 

For the base:

Combine the finely crumbled biscuits and melted butter. Press this mixture to a loose bottom tin or the dish you are using. Refrigerate it while you make the rest of the cheesecake.

For the filling:

Dissolve gelatine in hot water. Whip the whipping cream with 2-3 tbsp icing sugar, till soft-medium peaks form. Combine the cream cheese and sugar, till it becomes smooth. Combine the mango puree and warm gelatine mixture. Add this to the cream cheese mixture. Mix well. Add the whipping cream to this in two batches and combine well. Add the mango pieces (if using) and mix well. Pour this mixture over the biscuit base and return it to the fridge. Make sure that this layer is refrigerated for a minimum of 2 hours, before adding the glaze topping.

For the glaze topping: 

Dissolve the gelatine in hot water. When it is warm, add it to mango puree and mix well. Pour this over the cream layer, once it is set. Refrigerate for another 2 hours or till you serve. Garnish with strawberry/ mint leaves.Keep @ room temp 10 mins before serving, so that the biscuit layer softens a bit.You can store in the fridge for 3-4 days. 

Notes
If you are using a single loose bottom tin, I think you will need a 9 or 10 inch loose bottom tin. I got 12 mini cheese cakes, 6 cheesecakes in glass and a 6 inch round cheese cake from the above qty. You can serve it in individual glasses also. The biscuit layer should be refrigerated for a minimum of 10 mins, before pouring the cheese layer on top. For those of you reside in India, I think you can use Amul cheese spread to make this. I used ⅓ cup of sugar. Do a taste test and adjust the qty accordingly. I used canned mango pulp. Though I've used gelatine in this recipe, I think you can substitute it with same qty china grass/agar agar.

Limetten-Joghurtcreme mit frischer Mango

Zutaten:

1 Mango (ca. 400 g)
4 Blatt Gelatine
2 Eier (Größe M)
125 g Zucker
150 g Vollmilch-Joghurt
Saft und abgeriebene Schale von 2 Bio-Limetten
150 g Schlagsahne
Limettenspalten zum Verzieren

Zubereitung:

1. Mango schälen, Fruchtfleisch vom Stein schneiden und klein würfeln. Fruchtfleisch, bis auf etwas zum Verzieren, in 4 Gläser (à ca. 300 ml Inhalt) verteilen. Gelatine in kaltem Wasser einweichen. Eier trennen. Eigelbe und 75 g Zucker mit den Schneebesen des Handrührgerätes schaumig schlagen. Joghurt, Limettensaft und Hälfte der Schale in die Creme rühren.
2. Gelatine ausdrücken und auflösen. 2 EL Creme in die Gelatine rühren, dann angerührte Gelatine unter die übrige Creme rühren. Eiweiß und Sahne getrennt steif schlagen. Eischnee und Sahne locker unter die Joghurtcreme heben. Creme in die Gläser füllen und mindestens 2 Stunden kalt stellen.
3. 100 ml Wasser und 50 g Zucker aufkochen, ca. 3 Minuten köcheln lassen. Vom Herd ziehen, etwas abkühlen lassen und restliche Limettenschale untermischen. Auskühlen lassen. Kurz vor dem Servieren beiseitegelegte Mango auf der Creme verteilen und mit Limettensirup beträufeln. Mit Limettenspalten verzieren.

Zubereitungszeit ca. 30 Minuten. Wartezeit ca. 2 Stunden. Pro Portion ca. 1510 kJ, 360 kcal. E 8 g, F 17 g, KH 43 g

Schokoladenküchlein

Zutaten:


50 g Schokolade, zartbitter
50 g Halbfettmargarine
50 g Weizenmehl
1 EL Kakaopulver
3 Stück Hühnerei/er
40 g Zucker
1 Prise(n) Jodsalz
1 TL Pflanzenöl
2 Stück (klein) Mangos

Zubereitung:


Backofen auf 200° C (Gas: Stufe 3, Umluft: 180° C)vorheizen. Zartbitterschokolade grob hacken und mit Margarine schmelzen. Mehl mit Kakaopulver mischen. Eier trennen. Schokoladen-Margarine-Mischung mit Zucker schaumig schlagen. Eigelb nacheinander unterrühren. Mehl-Kakaopulver-Mischung kurz unter den Teig rühren. Eiweiß mit Salz steif schlagen und vorsichtig unter den Teig heben.
5 Souffléförmchen (Durchmesser 8 cm) mit Öl auspinseln. Teig in die Förmchen füllen und im Backofen auf mittlerer Schiene ca. 20 Minuten backen. Mangos schälen, Fruchtfleisch vom Stein lösen und pürieren. Mangopüree auf 5 Dessertteller geben. Schokoladenküchlein vorsichtig aus den Förmchen stürzen, auf das Mangopüree setzen und heiß servieren.

Obstsalat Thai-Art

Zutaten:


70 g trockener Reis
1 Prise(n) Jodsalz
1 Stück Chilischote/n
1 Stück Papayas
300 g frische Ananas
1 Stück (groß) Mangos
1 Stückchen Ingwer, (0,5 cm) gerieben
2 Stück Limetten, unbehandelt
1 TL Zucker
300 g Pitahaya/Drachenfrucht, rot/gelb

Zubereitung:


Reis nach Packungsanweisung in Salzwasser mit der aufgeschnittenen Chilischote garen. Papaya, Ananas und Mango in Stücke schneiden.
Pflanzenöl erwärmen, Ingwer hineinreiben und kurz anschwitzen. Die Schale einer unbehandelten Limette abreiben, Saft aus beiden Limetten auspressen. Die Limettenschale und den Saft einer Limette zum Öl geben.

Die Mischung unter den Reis rühren, mit Zucker süßen und abkühlen lassen.

Pitahaya (Drachenfrucht) halbieren, das Fruchtfleisch auslöffeln und mit dem restlichen Limettensaft pürieren.

Chilischote aus dem Reis entfernen. Die Früchte darauf anrichten und mit der Pitahayasauce beträufeln.

Tipp: Dieses Rezept ist für einen Sattmacher-Tag ohne Zählen geeignet. Sie brauchen sich dann keine ProPoints® Werte dafür anzurechnen und können die Mengen individuell anpassen.

Etwas langwieriger in der Zubereitung, aber dafür eine echte Geschmacksexplosion!

Mascarpone-Limetteneis mit frischer Mango



Personenanzahl: 4

Zutaten:

500 g Mascarpone
200 g Puderzucker
200 g Schlagsahne
130 ml gepresster Limettensaft
1 Mango

Zubereitung:

Die Mascarpone mit dem Limettensaft in einer Schüssel gut verrühren. Dann den Puderzucker dazugeben und so lange rühren, bis keine Klümpchen mehr vorhanden sind. Das Ganze anschließend ca. 1 bis 1,5 Stunden ins Eisfach stellen, bis der Rand von der Masse beginnt, hart zu werden.
Anschließend die Masse aus dem Kühlschrank holen. Die Sahne halb steif schlagen und unterrühren. Dann nochmals ca. 6 Stunden ins Eisfach stellen, bis das Eis hart wird.

Ca. 15 Minuten vor dem Verzehr das Eis aus dem Kühlfach holen und antauen lassen, damit es sämiger wird.

Die Mango schälen, entsteinen und das Fruchtfleisch in Spalten schneiden.

Das Eis in Waffelschälchen servieren und die Mangospalten daneben anrichten.
